Baking soda is the cheap answer everyone knows and it works less well than its reputation. What actually removes a fridge smell, and what only sits there.

Baking soda is the answer everyone knows and it is narrower than its reputation. It neutralises acidic odours through a chemical reaction, which covers some food smells and does little for others — and an open box presents very little surface to the air.

Activated charcoal adsorbs a far wider range of molecules onto a very large internal surface, which is why it outperforms the traditional answer.

But before either: the smell is usually residue, not air. A spill under a drawer, something folded into a door seal, or a blocked drain hole holding stagnant water.

The case for charcoal

It adsorbs rather than reacts

A far larger range of odour molecules adhere to activated charcoal's internal surface, which is enormous relative to its size. That breadth is the practical difference from baking soda.

Charcoal-based rather than a scented gel — a fragrance in a fridge transfers to food, which is a worse outcome than the smell you started with.

Renewable rather than replaced

Sunlight periodically drives off the moisture and it goes back in. That gives you a maintenance routine instead of a guess about when a box is spent.

Activated charcoal bags

Recharge them in sunlight as the manufacturer directs. A bag that has never been recharged stopped adsorbing months ago and looks exactly the same.

The case for baking soda

It is already in the cupboard

Free, effectively. For a mild acidic smell it does something, and nobody has to buy anything.

Its real strength is as a cleaner

This is where the reputation is earned. As a mild abrasive paste it cleans fridge surfaces well without scratching and without leaving a scent — and cleaning the surfaces is what actually removes most fridge smells.

That is a different job from leaving a box open on a shelf, and it is the better use of it.

The step that beats both

Find the source. Three places, in order of how often they are it:

Under and behind the drawers. Lift them out entirely. Spills run underneath and are invisible with the drawers in place.

The door seal. Fold it back and look inside the pleats. Food gets into them and stays.

The drain hole. A small opening at the back of the fridge compartment that carries condensation to a tray by the compressor. Blocked with debris, it holds stagnant water — and it is one of the most common causes of a smell with no visible source. Clear it gently with something flexible and blunt.

Where the cheaper option is genuinely enough

Cleaning properly and using nothing. A fridge with no residue and a clear drain hole does not usually need an absorber at all.

Wrapping things properly. Most transferred smells are an unwrapped item rather than a fridge problem.

Baking soda as the cleaning paste rather than as the box on the shelf.

Who should pick which

Charcoal if the fridge is clean and a faint smell persists. The better absorber by a clear margin.

Baking soda if you want a cleaning paste, or the smell is mild and you would rather not buy anything.

Neither, first, if you have not lifted the drawers out and checked the drain hole. That is where the answer usually is.

The mistake to avoid

Reaching for an absorber before finding the source. Both of these manage air. A fridge with something rotting under a salad drawer produces odour continuously, and it will out-produce any absorber indefinitely while looking clean from the front.

The second mistake is a scented deodoriser. Fragrance in a confined space transfers to food, and a fridge that makes butter taste of synthetic citrus is a worse outcome than the smell it replaced.
