A dynamic microphone is the right default at a gaming desk, and it is the less capable microphone. That sounds contradictory and is not: a condenser is more sensitive, and sensitivity in an untreated room with a mechanical keyboard is a liability rather than a feature.

Sensitivity is the whole comparison

A condenser's diaphragm is thin and light and held at a fixed electrical charge, so very small pressure changes produce usable signal. A dynamic moves a coil of wire in a magnetic field, which takes meaningfully more energy.

Everything else follows. The condenser hears the fan, the keyboard, the room's reflections and the neighbour's dog because it hears everything, and it is not doing anything wrong when it does.

The gain trade is real and underrated

Because a dynamic outputs far less signal, it asks a great deal more of whatever amplifies it. On a cheap interface with a noisy preamp, the hiss floor rises with the gain and you can end up with a quiet, hissy recording — which people then blame on the microphone.

This is the one place a dynamic can genuinely disappoint, and it is why USB dynamics exist: the preamp is matched to the capsule at the factory and the question disappears.

Neither fixes the desk

Most keyboard noise does not travel through the air. It travels through the desk into a stand and into the capsule, and no choice of transducer changes that path — stopping keyboard noise reaching your mic is the page for it, and the fix is mounting rather than microphone.

The mistake to avoid

Buying a condenser because it reviewed better, then buying acoustic panels to make the condenser usable. That is solving a problem you created, in the expensive order.

Which one should most people at a gaming desk buy?

Is a condenser actually more sensitive, or just better?

What is phantom power and do I need it?
It is 48 V sent up the microphone cable to power a condenser's internal electronics. An XLR condenser needs it from the interface; a USB condenser generates what it needs internally. Dynamic microphones do not need it, and sending it to one does no harm.
Will either type remove keyboard noise?
Neither removes it, because most keyboard noise arrives through the desk rather than the air. That is a mounting problem with a mounting fix, and it is worth solving before deciding a microphone was the wrong choice.
